This cuve comes from the iconic single parcel of Sous Roche, located below Chteau Chalon, where Savagnin is grown on steep slopes under the cliff. The wine is a pure expression of the areas historic main grape and is produced with minimal intervention and great respect for the terroir. Franois Rousset Martin works intuitively and without modern oenological aids, and Cuve de Professeur is
